Tenshi ni Narumon can be gorgeous sometimes, and 
Nadesico has it's beauty moments. Cowboy Bebop is 
gorgeous. As for manga...

Angel Sanctuary, Screw, Cain, ANYTHING by Kaori 
Yuuki, basically, is pretty. I myself am partial 
to anythign by Takmiya Keiko (Song of the Wind 
and Trees, Toward the Terra, etc.), but don't get 
that if you don't like boy-boy themes. Saiyuki 
has a GORGEOUS manga....
