I read this thread with great amusement.
I use Photoshop for a living. ^_^
Above is a link to a huge cel that I used Photoshop to paste together.
Here is the way that I do it:

Make your multiple scans. Be sure the scanned area OVERLAPS! 
This is very important.
Figure out how big the canvas will be as a whole with the scans together.
Open one of the scans.
Go to the EDIT menu, and drag down to CANVAS SIZE.
Be sure you have selected where to add the space to:
if you are adding it to the right, click the square on the /left/ 
so that the space is added to the right of it.
Enter the appropriate canvas size.
Go to your second scan.
SELECT ALL and COPY.
Close this window.
PASTE into the other scan (with the increased Canvas size).
This should create a new layer if you are using a recent version 
of Photoshop. If you are using an older version, make a new layer 
and paste into that.
Now... the biggest problem with scanning is that it is nearly impossible to 
get them at exactly the same level. Here's how you fix that.
Go to the WINDOWS menu in Photoshop. Make sure you can see your 
layers. Select the top layer. At the top of the LAYERS menu, there is a 
window which says 'normal' and has a little arrow. Drag this menu down until it 
says DIFFERENCE.
Now, move the top layer around until the overlapping area is completely black.
You may have to use CTRL-T or TRANSFORM to rotate it appropriately.
Now you have the placement correct. SELECT the area which overlaps. 
Go to the LAYER menu. Select ADD LAYER MASK. Make sure your colors are black and white, 
with black as your top color. 
Now, select the gradient tool. Drag a gradient horizontally to 'fade' the top scan into 
the bottom scan. Deselect.
When you have the picture arranged as you want it, flatten image. You can then put it into 
index color to make a .gif or leave it full color to make a .jpg.
After all this work, select at least MEDIUM, preferably HIGH quality for your .jpg.
There you go!
